Ever notice how all Americans are Irish on St. Patty?s day and everything turns a shade of green.There?s Green Beer ??There?s ole Green Eyes???????????????In?Chicago they die the River Green ? ?Even my Pool is getting into the act?????And everyone is proud to be Irish you see signs, photos and everyone wants a kiss.Hmm!!On St. Patty?day it always seems to bring out?the the best in all of us and everyone wants to be an Irish?leprechaun.Hey is that my old boss giving us his thumb - ? ?? When we see women hanging from the cieling.Ya think we had enough to drink??? I guess we better drive home because we?ll be too drunk to walk.Many people will be eating Irish food such as Irish Stew and Corned Beef and cabbage on St. Patrick?s Day.Corned Beef is not an Irish dish.It is what us Americans think the Irish eat.But in fact a more traditional meal in Ireland?be ham and cabbage or bacon and cabbage, but?not corn beef.I said corn beef not Corny Beef - Anyway- ?Some say that in Ireland on St. Patrick?s Day the traditional green beer is prominent.??Thanks Raytchell!She mentioned lots of alcohol - ? ?????????????????But that is not the case.St. Patrick?s Day in Ireland is considered a holy day and pubs are closed, there are no parades and no drinking.And none of this!!?Well enough history (LOL) let?s get cooking.A breif Emanuelli - St. Patty?s Day?background;After I got married, my beautiful bride Camille (she is very beautiful) started cooking an Irish meal for St. Patty Day.I have no idea where she got this recipe from because there were no computers, no internet and I don?t think the neighbors were Irish.?Or could they??With names like?Fizzoulio, Haus?s, Neopolitano, and Esposito.Hmm...I guess they could be!!!?? Well anyway, she found it and it became a tradition on St. Patty?s day around our house and I started to look forward to it as a change of pace to our traditional meals.If you remember in a previous story, Italians are notorious for not writing recipes down.But this year, my lovely bride is working and?me (being a semi-retired and a stay at home dad) it was my turn and boy was I ever so confused.?I hate to admit it all the recipes I found sounded the same and very bland to me. All the pictures I seen everything looked blah no color just a plain brown and everything boiled.??Boil your meat, boil your potatoes, boil you veggie and so on.Where?s the love?The aroma??Where?? Oh- there it is - that?s better- I started getting worried.Well I found a recipe on the net and I tried to add some love even though it?s still?boiled (Irish accent) I tries to add me personal touch.No not Corn beef parmesan (boy would that be awful) and no I am not adding any tomatoes, (that?s a first).?And definitely no Yak?s milk in me soda bread.Is she our friend from the Blueberry Pie Blog?I like everything I cook to have an aroma which talks to everyone who walks into my house.It makes everyone feel welcomed.The meal is still boiled but I added more steps to add flavoring to the meal.Here is the menu

Here is the menuCorn beef Cabbage Cabbage Potatoes Soda Bread Irish Coffee (optional) Enjoy the recipesCorn Beef CabbageIngredients2- 3 lb Corn Beef brisket, 2 onions, cut into 6 wedges4- 5 cloves garlic, chopped 6 potatoes whole (micro waved 10 minutes)1 head of cabbage, rinsed and cut into wedges A pinch or two red pepper flakes 12 oz beef stock or broth Grated parmesan CheeseBrisket RubPapa?s Italian seasoning blend (recipe in cookbook) Garlic powder Black Pepper Sea saltDirectionsThe night prior: rinse brisket under cold water and trim off the excess fat.Shake seasonings onto meat and rub the entire brisket and place in a Tupperware container, plastic bag or on a place wrapped in Saran so that the meat is air tight.Keep in refrigerator over night.In a large sauce pot place your seasoned brisket and add beef stock and water to cover beef.Add in you cut onion and chopped garlic.Heat on high to a boil, and then reduce to a simmer before adding any additional seasoning.I added seasoning package that came with the brisket plus some red pepper flakes and a basil leaf.? Simmer until meat is tender which took about 2 hours.Micro-waving your potatoes; pierce potatoes with fork all around and place into a microwave oven on high for 5 minutes.Turn potatoes over and repeat process.Remove the meat and keep warm (covered bowl).? Skim off any fat -before adding your potatoes and cabbage.Reheat to a boil; and again reduce to a simmer until the cabbage is tender.???Replace the brisket back into the pot with the veggies for 5 to 10 minutes to reheat.Irish CoffeeIngredients1 shot Whiskey 1 tbsp Sugar 6 oz.Coffee Whipped Cream for garnish ?Directions ?Pre-warm a stemmed glass.Add the whiskey.Add the sugar and stir in the coffee.Float the whipped cream on top.Drink the coffee through the cream.Do not stir after adding the cream ?Irish Soda Bread ?4 to 5 cups flour (more like 5 ) 1 cup sugar cup butter (1 stick) 1 tsp salt1 tsp baking soda 2 packages of raisins 1 egg (2 eggs would be better) 2 cups cold milk Preheat the oven to 350 degrees.Combine sugar, salt and baking soda into flour.Cut in the butter and mix very thoroughly with your hands until it feels grainy.Stir raisins into the mixture.Stir in milk and egg to the mixture until well moistened.(I always have extra flour on the side to get dough to the right consistency for shaping bread).??Shape dough into 2 round loaves Place on greased cookie sheet.Cut lines into the top of the bread with a flour coated knife.?Bake for 1 hour.Test with a toothpick for doneness.Thank You Lenny Emanuelli - Oops it?s St. Pattys Day Lenny O?manuelli?Everyone is Irish on St. Patty?s day So enjoy?, have a Happy but?Safe St. Patty?s Day ? ????Keep EnRichin?Your Kitchen Now available on CD ? ?http://stores.lulu.com/nicotril
